So, my best bet would be to find a broadcast amp that accepted a 250mW (such as the 15W Max Booster) and, depending on the output I wanted, step up from there. Correct?

Many of the FM transmitter amps on the market list a value for power input and most that I've seen use 1 watts, 4 watts or similar. Would there be a problem driving these amps with a 250mw output or lower transmitter?

The catch is I have thousands of feet of 6 & 11, and hardly anytime to take a lunch break let alone shop...

If you know a specific frequency, you can try either one of these:
The Belkin TuneCast II (~$30us)
Or better yet, the C.Crane transmitter (~$70US).
There's also an easy mod to boost the C.Crane's output.

If you don't know the specific frequency or want to cover many
frequencies, I think I remember ...

This makes it very dangerous to amplify any of these devices, you will likely
radiate into close-by channels and you may get in trouble. Those chips were designed for immediate
local area use (a few meters) and are perfect for that purpose, but NOT FOR BROADCASTING!
